Our passion for
bean-to-bar
chocolate
Chocolate made with care, origin, and intention
At Amano Chocolate, we believe chocolate should tell a story of place, craft, and care. We shape each bar to bring forward the cacao’s natural character, from its aroma and texture to the layered flavors that develop through careful sourcing, roasting, and refining.
Located in Utah’s Wasatch Mountain region, Amano creates small-batch, bean-to-bar chocolate with a close eye on cacao origin, fermentation, roasting, refining, and flavor development. The name Amano means both “by hand” and “they love” in Italian. Both reflect the way we approach our chocolate, with care, patience, and deep respect for the cacao.
Our approach to chocolate
Amano’s chocolate begins with carefully selected cacao beans from regions known for distinctive flavor. Each origin brings its own character, shaped by climate, soil, cacao variety, fermentation, and the people who grow and prepare the beans.
Rather than treating cacao as a generic ingredient, we look for beans with a clear personality. Some origins lean bright and fruit-forward. Others show deeper cocoa, floral, nutty, or earthy notes. Our work is to bring those qualities forward through thoughtful roasting, refining, and formulation.
That’s what bean-to-bar chocolate means to us. We guide the chocolate from raw cacao bean to finished bar, making small adjustments along the way so the final flavor feels balanced, expressive, and true to its origin.
Why origin shapes flavor
Chocolate can carry a sense of place much like wine, coffee, or olive oil. Cacao from one region may taste noticeably different from cacao grown somewhere else, even before it becomes chocolate.
Those differences come from:
- Cacao variety
- Growing region and terroir
- Fermentation practices
- Drying methods
- Roast profile
- Ingredient balance
- Refining and conching time
Amano crafts its single-origin bars to highlight those differences with care and precision. Rather than masking the cacao’s natural complexity, each bar gives its origin room to show its character through clear flavor, balanced texture, and a finish that lingers.
Small-batch craftsmanship
Small-batch chocolate allows for closer attention at every stage. We can adjust roast profiles, refine texture, and evaluate flavor as it develops, rather than relying on a one-size-fits-all approach.
This slower approach helps shape the clean snap, silky melt, and layered tasting notes that define a well-made bar. It also keeps the work personal. Each origin asks for something slightly different, and each batch gives us another chance to listen closely to the cacao.
Amano’s goal isn’t to be the largest chocolate maker. Instead, we make chocolate with depth, balance, and a clear connection to the beans behind it.
Respect for cacao and sourcing
Great chocolate depends on great cacao. That often means building direct, respectful relationships with the people and communities connected to the beans.
Our sourcing philosophy is grounded in fair, direct relationships wherever possible. We value transparency, quality, and the work of farmers who help make expressive chocolate possible.
That respect carries through the whole process. From sourcing to roasting to wrapping the finished bar, each step should honor the cacao rather than overwhelm it.
