Product Details:

Madagascar has long been known for producing fine cocoa beans. The beans from Madagascar are primarily of the Trinitario and Criollo varieties. The soil and climate produce beans that are particularly fruity and our Madagascar bar is a fine example of this. This chocolate is perhaps a bit untraditional with its strong fruity flavors that include hints of citrus and berry and shows the wide range of flavors possible in cocoa. It is absolutely delicious and one that you will remember for its incredible flavor.

The Chocolate Maker's Notes:

When I first found the cocoa beans we use to make our Madagascar chocolate, I knew I was on to something special. They are a wonderful example of the wide variety of flavors that can be produced by superior cocoa beans. They have well balanced flavor as well as natural citrus and raspberry notes — something truly unique in the world of cocoa.

The beans are grown on a single family owned estate in the Sambirano valley of Madagascar. The bit of magic that gives these cocoa beans their unique flavor is Madagascar's unique combination of climate and soil combined with the way that the cocoa is fermented and dried by a family who truly cares about quality. This all comes together to create a cocoa bean that has true potential to make an exceptional chocolate. Our job at Amano is to take cocoa beans such as these and to work with them to bring out their fullest potential as they are turned into chocolate. This, I believe, we have succeeded in doing.

Since its release, this chocolate has quickly become a favorite among pastry chefs (in some of the nations leading restaurants). They love its assertive citrus and raspberry flavor notes. Passion is what drives us at Amano; this is exactly what I feel each time we make this chocolate.

The quality of chocolate is influenced by time and place. Flavor changes with the seasons and is intricately tied to the soil and climate. At the turn of the century, Criollo cacao trees were brought from Venezuela to the island of Madagascar. We craft this chocolate from beans from the offspring of these trees. The mild chocolate character comes from the trees' Venezuelan heritage. The hints of citrus come from Madagascar's soil and climate and are unique to beans from Madagascar. The marriage results in an extraordinary chocolate you will love.

Amano Artisan Chocolate is dedicated to reviving the art of making fine chocolate from the bean. We craft our chocolate in small batches only from the finest cocoa beans, pure cane sugar, and whole vanilla beans. I hope you enjoy our chocolate.

 

Presentation:

Each bar is individually foil wrapped and beautifully boxed. Each box is printed on high grade paper providing a luxurious feel in the hand. The "Madagascar" painting is an original piece of artwork by artist Wulf Barsch commissioned by Amano Artisan Chocolate specifically for the Madagascar 70% Dark chocolate. The borders and details have been gently highlighted with gold foil accenting creating a stunning presentation making it suitable for gifts as well as your own enjoyment.
